Paleo Challenge

Here are some great recipes from people:
Deb from Bridgewater Boot Camp gave us a great dessert recipe
Cut a banana in half length wise. Dip in fresh squeezed orange juice, Roll in coconut. Freeze

A great dip is BLT Guacamole Dip
1/2lb cooked turkey/regular bacon
3 ripe avocados
2 cloves Garlic
2 jalapeno peppers seeded and finely chopped
1/4 red onions finely chopped
2 lemons
1 small heart romaine lettuce chopped
1 cup chopped tomatoes

Halve and pit avocados mix with grated garlic peppers and onions. Add lemon juice. Season with salt and pepper.Top guacamole with bacon,lettuce and tomatoes.

Jill Has given us the steps to make Jerky:
. Purchase good “clean” meats, grass fed, no growth hormones…you know the drill.
You can use brisket, roast, london broil, top round, tenderloin; whatever you want.

2. To make slicing easier (ESPECIALLY if using non beef meats) partially freeze the meat to make it easier to work with. If you want to marinate beforehand, feel free. Too much bad stuff in most marinates, so I choose salt free pepper rub.

3. Slice the cut in half if necessary then cut 1/4″ slices

4. Place on cooling rack, placed on top of cookie sheet to catch any drippings. I have stackable racks and used this method. DO NOT LET the pieces touch each other.

5. Place in oven at 120 degrees for 10 hours, leaving the door ajar (like when you broil) to allow proper air circulation (very important!). BE CAREFUL with children and pets. I threw mine in the oven after dinner and left it there over night.

My oven only goes as low as 170 degrees, which I did for 10 hours and it was delicious so perhaps you’ll have to tinker with this.

The meat will look almost black and shriveled up; you know, like jerky is supposed to!

6. Allow to COMPLETELY cool. Store in airtight container or zip lock bag in your refrigerator.

ENJOY. Very EASY and delicious, if you like jerky!

    Jerky update; delish but next time I’ll slice thinner and cook longer. (Next time is tomorrow night!)

    Sliced thinner (with electric knife) cooked longer and is awesome. Also made some with salmon. Really really good!! Sliced with electric knife, parcially frozen for easier handling.
