Easy Paleo Snack

One of my favorites:

~ Granny Smith apple (low glycemic index, high water content and sweet)
~ 2 tbsp. nut butter (almond, cashew, etc.; NO peanut)
~ 2 slices of turkey (deli counter, I ask for the “real” turkey, like thanksgiving turkey, not deli meat turkey)

Keep a jar of nut butter at your desk at work (or, umm, in your purse like me)!

    Eating that right now Holly.

    I made the blueberry ice cream last night. It was really good. Creamy and sweet like you were eating a real dessert. 2 c. frozen blueberries, 1 can coconut milk (recipe called for full fat milk but I could only find light at Trader Joe’s) and 1 tsp vanilla – mix in blender. Pour into individual cups and freeze 1-2 hours. Kevin did tell me it would be better with chocolate chips. Found some this organic semi-sweet chips this morning at Stop & Shop that were dairy free and gluten free so I will try that next time for a little extra treat!

    It’s legal in Mass right, and anyone who can figure out a Paleo substitute for ice cream is my kinda woman!!!!!!!

    Sorry Lindsey I am already taken – and I got the recipe off some website so I can’t take the credit! Just a note on the ice cream especially to you Chip since we know you are used to 12 scoop sundaes, you don’t want to make more than you will eat within the hour or two. Otherwise it gets too hard and it is more like Italian Ice and you have to scrape. I guess it could be a matter of preference.

    Holly, thanks for the help. FYI Stop and shop does sell almond butter, it is in the organic foods aisle. A lil expensive but with the price of gas to go up to Hanover it might be the same.

    Dennis – Trader Joe’s is $4.00 less so it is worth the drive especially since there’s lots of good things to buy there. TJ’s cage free eggs are much cheaper too.
