Paleo Challenge

It is the end of the first week of the Paleo Challenge. Congrats. Your body should be adjusted to the food changes you have made and you should start to feel and see the great benefits from eating Paleo.
You all have had some great questions this past week. Keep them coming. What we all need are some new recipe ideas and from what I am hearing from people some great snack ideas.
If you have any great snack recipes please post them in the comment section. Remember even your snacks should be balanced protein.carbs,fat.
Again if you have not bought The Paleo Diet (Loren Cordain) book I would strongly suggest getting it. I am rereading it again and it so helpful.

Hi Everyone – Don’t have any snack recipes, but here are a few good paleo things for summer that I have made:
- Tequila Lime Marinade for grilled shrimp or chicken: 1 1/2 cups of tequila; 1 cup of fresh lime juice (5 to 6 limes), 1/2 cup fresh orange juice (2 oranges), 1 tblsp. chili pepper, 1 tblsp. fresh minced garlic; chopped jalapeno pepper (to taste). Marinade your chicken or shrimp in this from anywhere from a few hours to overnight and then grill.
- Strawberry/Spinach/Almond Salad – use baby spinach, add sliced strawberries, and slivered almonds. Could also add chicken or shrimp for protein.

Sounds yummy Maureen! thank you!! Sounds like you may even have a bit of tequila left over to sip while waiting for the marinade? hummmm…..

Hi!
Two things. I take small baggies and put blueberry’s strawberry’s and one serving of almonds in them and keep them in the fridge. Great snack already portioned and ready to eat.
Also I’ve been making pesto for salad dressing. 1 Cup of olive oil, 2 or 3 garlic cloves 2 tea spoons of pine nuts and a handfull of basil. Throw it all in the food processor. It’s awesome on salad or to use as a marinade.
